Ingredients
  • 10-12 large onions chopped (about 18 cups)
  • 1 cup hot peppers chopped
  • 5 garlic cloves finely chopped
  • 4 cups green bell peppers chopped
  • 2 T honey or sugar
  • 2 cups Clover Valley Farms Vinegar

Instructions
  1. Combine all ingredients in a large kettle and bring to a boil.
  2. Reduce heat, cover and simmer for 30 minutes, stirring at least once.
  3. Using a slotted spoon, scoop the salsa into sterilized jars.
  4. Seal jars and process in a hot-water bath: 35 minutes for pints and 45 minutes for quarts.
Recipe Notes

You will have about 2 quarts remaining liquid to use for hot sauce!
