Chilled Marinated Cauliflower

  • 2/3cup fresh basil leavesminced
  • 1/2cup freshly minced parsley
  • 1/2cup minced red onion
  • 1cup packed coarsely grated carrot
  1. In a large saucepan, combine all ingredients.
  2. Bring to a boil, reduce heat, cover and simmer for about 15 minutes (until cauliflower is tender).
  3. Transfer to a serving bowl and chill.
  4. Add additional ingredients before serving and mix well.
