Chilled Marinated Mushroom Soup

Ingredients
  • 12 oz mushrooms thinly sliced
  • 1/2 cup minced onion
  • 1 clove garlic crushed
  • 1 bay leaf
  • 3/4 cup dry white wine
  • 1 cup water
  • 3/4 t salt
  • Fresh black pepper to taste
  • 1/4 t honey
  • 1/2 t dried basil
  • 1/2 t dill weed
  • 1/4 t thyme
  • 2 T olive oil
  • 2 T Clover Valley Farms Basil Infused Juneberry-Currant Wine Vinegar
  • 1/4 cup finely-minced green onions

Instructions
  1. Place mushrooms, onions, garlic, bay leaf, wine, water, salt, and pepper in a saucepan.
  2. Bring to a boil, lower the heat, cover, and simmer 15 minutes.
  3. Remove from heat.
  4. Let stand, uncovered, about 10 minutes.
  5. Remove bay leaf.
  6. Add all other ingredients.
  7. Mix well, and chill until very cold.
  8. Serve topped with delicate rounds of fresh lemon.
