Chilled Marinated Mushroom Soup
  • 12oz mushroomsthinly sliced
  • 1/2cup minced onion
  • 1clove garliccrushed
  • 1 bay leaf
  • 3/4cup dry white wine
  • 1cup water
  • 3/4t salt
  • Fresh black pepperto taste
  • 1/4t honey
  • 1/2t dried basil
  • 1/2t dill weed
  • 1/4t thyme
  • 2T olive oil
  • 2T Clover Valley Farms Basil Infused Juneberry-Currant Wine Vinegar
  • 1/4cup finely-minced green onions
  1. Place mushrooms, onions, garlic, bay leaf, wine, water, salt, and pepper in a saucepan.
  2. Bring to a boil, lower the heat, cover, and simmer 15 minutes.
  3. Remove from heat.
  4. Let stand, uncovered, about 10 minutes.
  5. Remove bay leaf.
  6. Add all other ingredients.
  7. Mix well, and chill until very cold.
  8. Serve topped with delicate rounds of fresh lemon.
