Crock-pot Rabbit and Potato Casserole

Ingredients
  • 2 small rabbits cut into pieces
  • 10 oz evaporated milk
  • 1/2 t thyme
  • 1/2 cup hot water
  • 4 cups potatoes peeled and sliced thin
  • 2 slices bacon
  • 4 medium onions sliced
  • 4 T butter
  • 1 dash paprika

Instructions
  1. Place potatoes and onions in crock-pot and season with salt, pepper, and thyme.
  2. Add ½ cup hot water; add all but ¼ cup evaporated milk.
  3. In a heavy skillet, melt butter over medium-high heat; season rabbit with salt and pepper, then brown rabbit on all sides.
  4. Place rabbit in crock pot and season with more thyme, if desired.
  5. Pour remaining milk over rabbit and sprinkle with paprika.
  6. Cover and cook on low heat for 6-9 hours or until rabbit is very tender.
