Crock-pot Rabbit Minestrone

Ingredients
  • 1lb rabbitdiced
  • 1/2lb ground suetyou can substitute lard or vegetable shortening
  • 1T Clover Valley Farms Basil Infused Salt
  • 1lb tomatoeschopped, undrained
  • 1/2cup cooked spaghetti or other noodlesin 2 inch pieces
  • 1cup frozen green peas
  • 1/2cup dry navy beanssoaked overnight
  • 1 medium potatodiced
  • 1 medium oniondiced
  • 1 stalk celerysliced
  • 1/4t black pepper
  • 1 bay leaf
  • 3T fresh parsleychopped
  • 1 medium carrotdiced
  • Italian cheese for garnish
Instructions
  1. Place meat in the bottom of a crock pot; cover with all remaining ingredients.
  2. Stir to blend; cover and cook on low heat for 10-12 hours.
  3. Garnish each serving with Parmesan or another Italian style cheese.
