Rub the rabbit all over with salt and pepper.
Insert garlic cloves throughout the cavity.
Place 1 sliced onion in the bottom of the crock pot; add rabbit and remaining ingredients and cover.
Cook on low heat for 10-12 hours.
Remove rabbit from pot and cover to keep warm.
Whisk 1-2 T flour into an equal amount of water, then stir into crock pot and cook on high heat, stirring until gravy is thickened.
