Instructions
  1. Drop potatoes into boiling water and cook 8-10 minutes until soft but not mushy.
  2. Drain and set aside to cool.
  3. Add chopped red onion.
  4. Separately, mix vinegar, oil and curry paste.
  5. Pour over potatoes, stir, cover and refrigerate.
  6. Stir in chopped cucumber and yogurt just before serving.
