Curried Rabbit with Vegetables

Ingredients
  • 3-4 lbs rabbit
  • 1/2 cup flour
  • 2 t Clover Valley Farms Basil Infused Salt
  • 1 1/2 t curry powder
  • 1/4 t paprika
  • 1 cup hot water
  • 8 potatoes peeled and halved
  • 10 carrots cut into 2 inch pieces
  • 1 large onion sliced
  • 1 bay leaf
  • 1 cup sour cream

Instructions
  1. Clean and cut up rabbit.
  2. Combine dry ingredients in a paper bag, add pieces of rabbit and shake.
  3. Remove from bag and brown in bacon fat (or oil) in a skillet heated over medium-high heat. Brown on all sides.
  4. Add water. Cover and simmer for 1 hour.
  5. Add vegetables and bay leaf and cook for an additional 30 minute or until done.
  6. Arrange rabbit and vegetable on a platter.
  7. Add 1 cup sour cream to liquid in pan and thicken for a gravy.
