Ingredients
  • 4 lbs green beans
  • 5 cups water
  • 5 cups Clover Valley Farms Vinegar
  • 1/2 cup less 1 T pickling salt non-iodized
  • 1 3/4 t crushed red pepper
  • 3 1/2 t dill seed or 7 fresh dill heads
  • 7 cloves garlic or maybe 14

Instructions
  1. Wash and trim beans to uniform length so they stand upright in pint jars to the shoulder of the jar.
  2. Bring water, vinegar, and salt to a boil.
  3. Place crushed red pepper, dill (fresh or seed) and garlic equally dispersed between 7 pint jars.
  4. Pack beans into jars.
  5. Pour boiling water/vinegar/salt mixture into jars, leaving ½ inch headroom, cover with lid and ring.
  6. Place jars in boiling water bath for 10 minutes.
Recipe Notes

Makes 7 pints. Wait at least 2 weeks for the beans to develop full flavor. Yum!
