Ingredients
  • 4 cups tomato juice
  • 1/2 cup finely minced onion
  • 1 clove garlic minced
  • 1 medium bell pepper minced
  • 1 t honey (optional)
  • 1 medium Cucumber peeled, seeded and minced
  • 2 scallions minced
  • Juice of ½ lemon + 1 lime
  • 2 T Clover Valley Farms Vinegar
  • 1 t each: dried tarragon and basil
  • 1/4-1/2 t cumin
  • 1/4 cup freshly minced parsley
  • 2-3 T olive oil
  • salt, pepper and cayanne to taste
  • 2 cups freshly diced tomatoes

  1. Combine all ingredients.
  2. (Optional: puree all or some.)
  3. Chill until very cold.
