Mexican Rabbit with Rice

Ingredients
  • 1 fryer rabbit cut into pieces
  • 1 thick slice ham chopped
  • 1 green pepper chopped
  • 1 bay leaf
  • 2 whole cloves
  • 12 black olives chopped
  • 1 T olive oil
  • 1/2 t salt
  • 2 T vegetable oil
  • 2 slices bacon chopped
  • 1 medium onion sliced
  • 1 clove garlic pressed
  • 2 t parsley minced
  • 1 1/2 cup brown rice
  • 4 oz pimentos chopped
  • 1 cup sherry
  • 1/4 t black pepper

Instructions
  1. In a heavy stew pot, brown the rabbit, bacon, and ham in the vegetable oil.
  2. Add the onion, green pepper, and garlic, and sauté until tender.
  3. Add the bay leaf, parsley, cloves, and cook another 3-5 minutes.
  4. Wash the rice and add it to the pot, stirring well to coat with the oil.
  5. Add enough boiling water to cover the meat (about 4 cups).
  6. Add the salt and pepper, cover and simmer until meat is tender and the rice has absorbed the water.
  7. Add the sherry, oil, olives, and pimentos; cover the pot and allow to simmer and steam for 5 minutes.
  8. Blend mixture well and spoon to a platter to serve.
