Ingredients
  • 1 whole rabbit
  • ground pepper and ground cardamon for rub
  • ½ cup fresh parsley chopped
  • ½ cup vegetable oil
  • 1 clove garlic quartered
  • 1 large onion quartered
  • ½ cup dry red wine

Instructions
  1. Preheat oven to 325 degrees F.
  2. Rub rabbit all over with pepper and cardamom.
  3. Stuff cavity with garlic, onion and parsley.
  4. Place rabbit in a roasting pan; add oil and wine, cover with foil, and bake for about 1 ¼ hours or until meat is done and tender.
