Pickled Onions
  1. Cover onions with boiling water and let stand for 2 minutes.
  2. Drain and cover with cold water to peel. (easier on the eyes).
  3. Cover with cold water and add salt, let stand overnight.
  4. Place in colander, drain and rinse thoroughly.
  5. Dilute the vinegar at least 1/3 with boiled water, then add the sugar and spices tied in a bag.
  6. Boil 5 minutes then remove the spice bag.
  7. Add the onions and bring to boiling.
  8. Turn into hot sterile jars and seal immediately.
