Rabbit Fricassee in Wine
  1. Season rabbit pieces with salt and pepper.
  2. Mix together oil, rosemary, garlic and red pepper.
  3. Place meat in a single layer in a dish and pour oil marinade mixture over meat, turning to coat.
  4. Cover and marinate in the refrigerator overnight of for at least 12 hours, turning meat several times.
  5. Heat a heavy skillet over medium-high heat.
  6. Add rabbit and marinade to pan, cover and cook until rabbit is browned all over.
  7. Add wine, and bring to a boil.
  8. Reduce heat, cover, and simmer for another 30-40 minutes or until meat is tender.
