Rabbit Mole
  • 2lbs cooked rabbit meat
  • 1/2cup blanched almonds
  • 2cloves garlic
  • 1t bitter chocolategrated
  • 2T olive oil
  • 1/2t anise seedscrushed
  • 2 1/2cups rabbit stockor use chicken
  • 2T bacon grease
  • 1 green pepperseeded and chopped
  • 1/4cup raisins
  • 1 small onionsliced
  • 1t sugar
  • 2T chili powder
  • 1t salt
  • 1/4cup flour
  1. Leaving the rabbit meat in fairly large chunks, dredge in the flour to coat.
  2. Heat a heavy skillet over medium-high heat and melt the bacon grease.
  3. Lightly brown the rabbit meat.
  4. To make the mole sauce: combine green pepper, raisins, garlic, and onion in a food processor and chop fine.
  5. Add olive oil to the skillet and sauté this mixture lightly.
  6. Add the chili powder, salt, and anise seed; stir carefully until well combined.
  7. Add the stock and stir constantly to prevent burning and slowly cook for 10 minutes.
  8. Add the chocolate and sugar, mix well and simmer for 5 minutes.
  9. Place the rabbit meat in a casserole and pour the mole sauce over the rabbit; cover and cook gently on a burner for about 30 minutes.
  10. Garnish with chopped black olives and pimento strips.
