Ingredients
  • 1 rabbit cut into pieces
  • 1 ham bone
  • 1 stalk celery chopped
  • 1 small red or green bell pepper chopped
  • 1 t ground black pepper
  • 1 t crushed red pepper flakes
  • 1/4 cup flour
  • 10 oz frozen okra thawed and chopped
  • 1 medium onion chopped
  • 2 T bacon grease
  • 2 t Clover Valley Farms Savory Infused Salt
  • 12 oz whole tomatoes
  • 12 oz tomato puree
  • 1/2 cup water

Instructions
  1. Combine the rabbit pieces, ham bone, onions, celery, and bell pepper in a large pot; add enough cold water to cover, and heat until boiling.
  2. Reduce heat and simmer for 1 hour.
  3. Add tomatoes and tomato puree; return to a boil.
  4. Stir in corn, okra, bacon grease, salt, black and red peppers, reduce heat and simmer for about 20 minutes.
  5. Whisk flour into ½ cup water until smooth; slowly stir the flour mixture into the gumbo, stirring constantly until gumbo is thickened and smooth.
  6. Adjust seasonings to taste.
  7. Ideally, serve over cooked basmati rice.
