Ingredients
  • 1 small rabbit cut into pieces
  • 1/2 cup butter divided
  • 4 t Clover Valley Farms Basil Infused Salt
  • 1 T lemon juice
  • 1/2 cup water
  • 3 T flour
  • 1 cup onion chopped fine
  • 2 T paprika
  • 1 t black pepper
  • 1 t caraway seeds
  • 2 cup sour cream

Instructions
  1. Melt 1 T butter in a large skillet over medium-high heat; add onion and sauté.
  2. Stir in 1 T paprika.
  3. Remove onion mixture from pan.
  4. Rub rabbit pieces with salt and pepper.
  5. Melt 2 T butter in skillet.
  6. Add rabbit and brown on all sides.
  7. Return onions to pan and add lemon juice, caraway seeds, and water.
  8. Cover and simmer gently over low heat for about 40 minutes or until rabbit is tender.
  9. Remove rabbit to a warm platter and cover to keep warm.
  10. Blend sour cream, flour and remaining paprika together and whisk into contents of skillet, stirring constantly until sauce just returns to the boiling point.
  11. Pour sauce over rabbit and serve over cooked rice or noodles.
