Roasted Vegetables with Savory Herbs
  1. Preheat oven to 475 F.
  2. In a large bowl, combine the carrots, beets, potatoes and onions.
  3. In a small bowl, stir together olive oil, vinegar, salt, and pepper; toss with vegetables until they are coated.
  4. Spread evenly on a large roasting pan.
  5. Roast for 35 to 40 minutes in the preheated oven, stirring every 10 minutes, or until vegetables are cooked through and browned.
  6. Just before serving, toss with extra Clover Valley Farms Herb Infused Vinegar of your choice for a fruity, crisp finish.
