Clover Valley Farms Rhubarb Vinegar
In a large non-aluminum saucepan, combine the tomatoes and vinegar.
Bring to a boil and simmer until the tomatoes are very soft, about 45 minutes.
While the tomatoes cook prepare the other vegetables. A food processor can be used to mince each vegetable separately.
When the tomatoes are very soft, process them through a food mill or strainer to remove the seeds and skins.
Return to the saucepan, and add the minced vegetables.
Simmer until the salsa has reduced to a nice thick sauce, about 1 hour.
Ladle the hot salsa into clean and hot half-pint or pint jars, leaving ¼ in. head space. Seal.
Process in a boiling water bath for 15 minutes.
Let cool undisturbed for 12 hours.
Store in a cool, dry place. Do not open jars for six weeks to allow the flavors to develop.
