Ingredients
  • 15 oz. black-eyed peas rinse and drain
  • 15 oz. black beans rinse and drain
  • 2 cups corn cooked and drained
  • ½ cup onion chopped
  • ½ cup sweet pepper chopped
  • 4 oz. green chilies diced
  • 2 cups diced tomatoes drained
  • 2/3 cup olive oil
  • ¼ cup Clover Valley Farms Vinegar
  • 1 T basil
  • 1 T oregano
  • ½ t thyme
  • ½ t black pepper
  • ½ t salt
  • 1 T minced garlic
  • ½ bunch cilantro minced

  1. Mix everything together.
  2. Cover and refrigerate overnight to mix flavors.
