Stir Fry Wild Rice with Snow Peas and Pork

Ingredients
  • 2/3 cup raw wild rice
  • ½ lb pork tender ¼” slices
  • 3 T peanut oil
  • 1 cup sliced celery
  • 1 cup sliced green onion
  • 1 cup sliced fresh mushrooms
  • 1 can sliced water chestnuts
  • ½ lb snow peas trimmed
  • 1 T grated fresh ginger
  • 1 T cornstarch
  • 1 T Clover Valley Farms Garlic Infused Rhubarb Wine Vinegar
  • 3 T soy sauce
  • ½ t salt
  • ½ cup cashews optional

Instructions
  1. Cook wild rice according to directions.
  2. Meanwhile, heat oil in heavy skillet; add sliced pork and stir-fry over high heat for 2 minutes until meat is no longer pink.
  3. Add celery, green onion, mushrooms, water chestnuts, pea pods and ginger.
  4. Stir-fry for 5 minutes over high heat until vegetables are tender-crisp; add wild rice.
  5. Mix cornstarch with vinegar, soy sauce and salt; add to pan juices and cook until thickened.
  6. Toss together to coat with glaze.
