Ingredients
- 3 T Clover Valley Farms Herb Infused Vinegar
- 3 T cold water
- 1 cake tofu
- 1 medium avocado
- 2 hard-cooked eggs
- ½ t dijon mustard
- ½ t prepared horseradish
- ½ cup finely minced red onion
- salt and pepper to taste

Instructions
- Place vinegar, water and tofu and avocado in food processor.
- Puree until smooth.
- Transfer to a bowl.
- Coarsely grate or finely chopped the hard-cooked eggs.
- Stir these, plus all remaining ingredients, into the puree.
- Cover tightly and chill.
