Tofu Avocado Egg Dip
1 1/2cups
1 1/2cups
  • 3T Clover Valley Farms Herb Infused Vinegar
  • 3T cold water
  • 1 cake tofu
  • 1 medium avocado
  • 2 hard-cooked eggs
  • ½t dijon mustard
  • ½t prepared horseradish
  • ½cup finely minced red onion
  • salt and pepper to taste
  1. Place vinegar, water and tofu and avocado in food processor.
  2. Puree until smooth.
  3. Transfer to a bowl.
  4. Coarsely grate or finely chopped the hard-cooked eggs.
  5. Stir these, plus all remaining ingredients, into the puree.
  6. Cover tightly and chill.
