Ingredients
- 1/3 cup peanut butter
- ¼ cup boiling water
- ½ lb. firm tofu
- 1 t Clover Valley Farms Herb Infused Vinegar
- 2 t tamari
- ¼ t ground ginger
- ½ cup finely-chopped toasted peanuts
- Optional:
- cayenne to taste
- freshly-minced chives to taste

Instructions
- Place the peanut butter in a medium-sized bowl.
- Add the boiling water, and mix until they combine to make a smooth, soft paste.
- In a separate small bowl, mash the tofu well, together with the vinegar and tamari.
- Mix until it is a uniform mash.
- Add the tofu mash to the peanut paste.
- Beat until smooth.
- Stir in ginger and peanuts and optional additions.
- Cover and chill.
