Ingredients
  • 5 ½ cups tomatillos chopped
  • 1 cup onion chopped
  • 1 cup green chilies chopped
  • 4 cloves garlic minced
  • 2 T cilantro minced
  • 2 t cumin
  • ½ t salt
  • ½ t red pepper
  • 1 cup Clover Valley Farms Herb Infused Vinegar Try Rhubarb-Honey for added sweetness or Juneberry Currant-Red Chili for added spice, or mix it up-half and half!
  • 1/3 cup lime Juice

Instructions
  1. Combine all ingredients in a large saucepan.
  2. Bring mixture to a boil.
  3. Reduce heat and simmer 10 minutes.
  4. Ladle hot salsa into hot jars, leaving ¼ inch head-space and process 15 minutes in boiling water hot bath.
