Ingredients
  • 2 T veg oil
  • 1 cup diced onions
  • 1 cup diced celery
  • 1 cup sliced carrots
  • 3 garlic cloves minced
  • 1-2 cup chopped hot peppers
  • 3 T chopped fresh parsley or 1T dried
  • 1 T fresh cilantro
  • 6 c chopped tomatoes or 4 c. tomato puree
  • ½ cup Clover Valley Farms Rhubarb Vinegar
  • 1 t salt
  • 1 t sugar

Instructions
  1. Heat oil in large saucepan.
  2. Add onions, celery, carrots, garlic and peppers. Sauté until soft about 10
  3. minutes.
  4. Add parsley, cilantro, tomatoes, vinegar, salt and sugar. Simmer for 45 minutes.
  5. Allow to cool slightly. Then blend to a smooth puree in a food processor or blender (will need to be done in batches).
  6. Return to saucepan and simmer for another 30 minutes. Adjust seasonings if desired.
