Ingredients
- 2/3 cup raw wild rice
- 1 t dijon mustard
- ½ t salt
- 1 ½ t sugar
- 3 T Clover Valley Farms Herb Infused Vinegar
- 1/3 cup olive oil
- 2 green onion minced with tops
- 2 avocados peeled and diced
- ½ red bell pepper thinly sliced for garnish

Instructions
- Cook wild rice as directed, drain and cool.
- Meanwhile, whisk together mustard, salt, sugar and vinegar.
- Slowly whisk in the oil until blended.
- Add the green onions and avocado cubes.
- In large bowl, fold together cooked rice with the dressing, onions and avocados.
- Serve chilled or at room temperature garnished with thinly sliced red bell pepper, if desired.
