Wild Rice and Avocado Salad
  • 2/3cup raw wild rice
  • 1t dijon mustard
  • ½t salt
  • 1 ½t sugar
  • 3T Clover Valley Farms Herb Infused Vinegar
  • 1/3cup olive oil
  • 2 green onionminced with tops
  • 2 avocadospeeled and diced
  • ½ red bell pepperthinly sliced for garnish
  1. Cook wild rice as directed, drain and cool.
  2. Meanwhile, whisk together mustard, salt, sugar and vinegar.
  3. Slowly whisk in the oil until blended.
  4. Add the green onions and avocado cubes.
  5. In large bowl, fold together cooked rice with the dressing, onions and avocados.
  6. Serve chilled or at room temperature garnished with thinly sliced red bell pepper, if desired.
