Ingredients

raw wild rice

dijon mustard

salt

sugar

Clover Valley Farms Herb Infused Vinegar
1/3
cup
olive oil
2
green onion
minced with tops
2
avocados
peeled and diced
½
red bell pepper
thinly sliced for garnish
Instructions
Cook wild rice as directed, drain and cool.
Meanwhile, whisk together mustard, salt, sugar and vinegar.
Slowly whisk in the oil until blended.
Add the green onions and avocado cubes.
In large bowl, fold together cooked rice with the dressing, onions and avocados.
Serve chilled or at room temperature garnished with thinly sliced red bell pepper, if desired.
