Ingredients
  • 2 cup cooked wild rice
  • 1/3 cup golden raisins
  • 2/3 cup frozen green peas
  • 1 cup diced turkey or ham
  • 1 6 oz can marinated artichoke hearts drained
  • ¼ lb fresh mushrooms sliced
  • 1 T fresh chives minced
  • watercress Bibb lettuce or garden lettuce
  • fresh parsley for garnish
  • Basil Vinaigrette recipe found under Salad category

Instructions
  1. Wild rice should be cooked, cold and dry.
  2. In salad bowl, combine rice with the raisins, peas, turkey or ham, artichoke hearts, mushrooms, and chives.
  3. Prepare Basil Vinaigrette and fold into the wild rice mixture.
  4. Refrigerate 1-2 hours.
  5. Toss again.
  6. Arrange on watercress or lettuce and garnish with parsley.
